Ingredients

  • 1 (16-ounce) package rotini, prepared according to package directions
  • 1 (6-ounce) jar artichoke hearts, drained and chopped
  • 2 large tomatoes, cored and chopped
  • 1⁄2 cup minced fresh basil
  • 1⁄2 cup sliced Kalamata olives
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1⁄2 teaspoon dried rosemary
  • 2 tablespoons nutritional yeast
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon ground black pepper

Instructions

  1. In a large saucepan over low heat, combine all ingredients. Stir to mix well and cook 3–4 minutes until heated through.
  2. Serve immediately.
