How to Make Sweetgreen’s Guacamole Greens Salad at Home and Vegan

We made it even easier for you to enjoy your favorite Sweetgreen salad at home and made the recipe even healthier by swapping out the dairy and meat for a satisfying plant-based alternative.

Sweetgreens' best-selling salad Guacamole Greens is originally made with roasted chicken, avocado, tomatoes, red onions, shredded cabbage, tortilla chips, spring mix, chopped romaine, a squeeze of lime, and jalapeño vinaigrette. We swapped the chicken for our homemade roasted tofu recipe that's just as delicious, if not better than the roasted chicken. A half-cup of tofu contains 10 grams of protein and is a good source of iron, which helps boost energy. Tofu is similar to a sponge in the way it absorbs the flavor. The soy-based protein mimics almost any of your favorite animal proteins with the right seasonings and cooking method. Enjoy this plant-based salad for a healthy lunch.

Vegan Guacamole Greens

Serves 2

Ingredients

For the Lime Cilantro Jalapeno Vinaigrette

  • ½ Cup Avocado Oil
  • ¼ Cup Fresh Cilantro
  • 1 Small Jalapeno, seeds removed
  • 1 Tsp Garlic Powder
  • ¼ Tsp Salt
  • ¼ Tsp Pepper
  • 1 Tsp Dijon Mustard
  • Juice of 1 Lime

For the Roasted Tofu

  • 1 Block Extra Firm Tofu
  • 1 Tbsp Olive Oil
  • 1 Tbsp Soy Sauce
  • 2 Tbsp Maple Syrup
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • ½ Tsp Liquid Smoke
  • ¼ Tsp Salt
  • ¼ Tsp Black Pepper

For the Salad

  • Spring Mix 
  • Romaine Lettuce, chopped
  • Tortilla Chips
  • Avocado, cubed
  • Grape Tomatoes, cut in half 
  • Red Onions, thinly sliced

Instructions

  1. Prep your Lime Cilantro Jalapeno Vinaigrette by adding all the ingredients into a blender. Blend until combined and smooth. Set aside. 
  2. Make your grilled tofu, by draining and pressing your tofu for 30 minutes. While your tofu is pressing, make your marinade by adding your soy sauce, maple syrup, garlic powder, onion powder, liquid smoke, salt, and black pepper to a small bowl. Mix until combined.
  3. Cut your tofu into rectangles, and add them into a shallow dish with your marinade. Marinade your tofu for 15 minutes. If you want you can prep this the day before and marinate it overnight. 
  4. Add your tofu to the baking pan. Brush a bit of extra marinade on top and bake in the oven for 20 minutes. Flip your tofu over, and brush extra marinade on top again. Bake for 20 more minutes. Remove from the oven and let it cool for 5-10 minutes before cutting them into thick slices.  
  5. Add your spring mix, romaine lettuce, avocado, grape tomatoes, red onions, and your vinaigrette. Toss until evenly mixed. Add your tortilla chips and grilled tofu. Enjoy!
