JUST Egg, for example, uses mung beans, which are closely related to the lupin in the legume family, to make its signature vegan eggs. A market report projects that the plant-based protein market will be valued at $15.6 billion by 2026, and be valued at $10.3 billion. Cultivating new plant-based proteins will be especially important to this growth.

Lupin beans can be toxic
But don't worry! Most lupin beans within the United States have been bred to reduce the toxic elements. While in some strains called "bitter lupins", the beans contain a toxic level of alkaloids called "lupanines" that can be dangerous for humans. However, the widely used "sweet lupins" have been bred for more than 100 years to reduce alkaloid levels for safe consumptions. Several companies including Lupii use these sweet lupins to bring consumers the low alkaloid-level legumes directly to consumers. When consumed at high levels, lupanines can be toxic to humans and livestock, so raw lupins and especially bitter lupins require soaking to wash off the toxic alkaloid.
